There’s never been a better time to fly, especially for folks departing from Brisbane Airport’s domestic terminal. The options for pre-flight feasting has expanded with the arrival of first-of-its-kind food hall concept The Food Collective. The SSP Group – a leading operator of food and beverage outlets in travel locations – signed a seven-year deal to open and operate a hawker-style market at Brisbane Airport, featuring a mix of local and international food and beverage outlets. This is a new innovation in Airport design, having never been done before in the Australian Airport landscape.
DCB secured a full D&C with involvement right from the development of the concept to delivery of the vision ready for opening day. The team completed five foodie concepts including leading burger-bar concept Ze Pickle, New York-inspired sandwich and bagel dispensary Upper West Side Deli, sushi, sashimi and Japanese culinary concept YO! Sushi, noodle-soup hotspot Nippon Ramen, and Mexican eatery Mi Casa Burritos.
The Food Collective has transformed the domestic terminal’s northern Cafe Court, boasting a large centralised seating area and on-site self-order kiosks to allow express ordering across all five restaurants. SSP is planning on rotating The Food Collective’s offering mid-way through the seven-year contract, keeping this current, fresh and exciting. The Food Collective has over 500+ menu items to choose from, including Gluten Free, Dairy Free, Vegan and Vegetarian.
